I wish ya'll could smell my kitchen right now and that's not a statement I'd normally make, believe me.
I've got a big ol' ham in the oven right next to a pan of cornbread, which will eventually become stuffing. I probably should have made the cornbread ahead of time, but once it's all mushed up together with some onions, celery and a box of Stove Top (don't ask, it's just how I do it) it's not going to matter that much. I've got a can of fruit cocktail in the cabinet, which I'll drain a little, add a heaping spoon of mayo then whip it all up and stick in the fridge. Right before it hits the table I'll add a chopped apple and banana.
Don't snarl your nose, I know mayo in fruit cocktail sounds ickypoo.. but it's good stuff. I wouldn't lie to you.
There will also be mashed taters, green beans and rolls.
And pumpkin pie, with Dream Whip.
We'll probably have enough to eat on for a few days, unless there's a great hillbilly kinfolk invasion. Let's pray that doesn't happen.
Hug your youngins, your critters and anyone else you're thankful for. Count your blessings. That's what it's all about, right?

Hey - I believe you when you say the mayo with fruit cocktail is good and tasty! Ever make a fruit salad using instant vanilla pudding, a little orange juice added to that, mixed with a can of mandarin oranges, chopped up apple and banana - yummy and also, one of my main requirements to fixing anything - EASY! I should write a cookbook title "The Lazy Lady's Cookbook" maybe?

Although I'm not a fan of fruit cocktail, and I'm not sure I could swallow the mayonnaise thing - I thought of a quick and easy recipe (similar) I thought I'd share.
Next time don't drain the fruit cocktail. Keep the juice and use a small package of instant vanilla pudding. Mix it all up and chill.
